I’ve got the Christmas crazies. I’ve stuffed envelopes with last year’s Christmas letter and this year’s card (I wonder if I’ll actually get them in the mail!), made a list of things to buy at the grocery store, and pondered some final gift ideas. I’ve visited with friend and volunteered to help with a couple of parties today. I know that wrapping would be a fine idea, but I’m sure it’ll get done sometime.
What I haven’t done is plan meals for the week. Really, who can remember everything? Not me. So, I was kind of thrilled to put this together last night.
It’s a December bowl of local goodness…
Roasted Local Veggies and Organic Smoked Sausage
Cut up a bunch of potatoes, beets, parsnips, and red onion. Drizzle with good olive oil, salt and pepper and roast at 425 degrees until brown and tasty.
Cut and fry up the sausage until crispy.
Shove everything in a bowl and sprinkle with fresh parsley
